The heart and focus for any roastery should be its supply chain ofgreen coffee. Sourcing directly from producers themselves in an effort to improve not only the coffee quality but also the transparency of the relationship between grower and consumer is invaluable in helping define your business’s unique values and practices.
In 2015, we launched the E1 Project as the mainstay of our offering from the roastery and we turned to El Salvador as a producing country as it continues to offer a simple supply chain of quality coffee from committed specialty producers dedicated to a sustainable future of coffee farming.
The idea behind this is simple: buy one coffee from one Estate and tell that story between grower and roaster in order to assist our customers to better sell the coffee in their cafes with greater transparency.We returned in March of this year, spending the 1st few days of our trip with our friend Fernando Lima, manger of the Cuzcachapa Cooperative in the town of Santa Ana – A man who has dedicated most of his career to representing the coop members, helping improve their crop and get it to market. Facing blind cupping tables of over 40 samples at a time, one coffee that stood out immediately was Finca Buena Vista for having all the qualities that have become so important to our E1 Project coffee. Body, sweetness, acidity and an overall taste balance. To our delight, Finca Y Beneficio Buena Vista is owned and run by Ricardo Lima,Fernando’s older brother.
Situated in the micro region of El Anonal, Atiquizaya in the Ahuachapán department of western El Salvador, Buena Vista benefits from having its own wet mill on site. Being Rainforest Alliance certified as well as organic, Ricardo’s farming practices are both experimental and ecologically sustainable in equal measure. The mill is still in an ongoing state of painstaking rebuilding, thanks to Ricardo’s love of repairing and rebuilding anything. His love of tinkering with beautiful old vintage milling machinery is a lifelong commitment to bring them back to life and breath soul into his once thriving mill. Needless to say, both the farm and the old mill were beautiful in both their appearance and history.
Annual rainfall averages 1800 mm but Ricardo also utilises the natural spring on his farm both in the irrigation and processing stages. In addition, the farm has built a portable clean water program that now services over 47 neighbouring families and Ricardo is the proud patron of the nearest school which benefits directly from some of the profits of each harvest. One of the fascinating traits that we loved about Ricardo and his philosophical approach to coffee farming (and life in general) was his willingness to experiment. To constantly be looking at new ways of planting or processing to combat leaf rust and improve coffee quality in the cup. He’s a deeply intelligent man – calm, passionate, opinionated and determined. He’s the man who tells you how it is and we loved that about him.
The 2016 harvest will see a little over 2000 bags produced from Buena Vista, a far cry from the 40,000 this mill once produced. As with many coffee growers in El Salvador life is now very different thanks mainly due to climate change but we are thrilled to be bringing back almost a quarter of this year’s harvest and our commitment to Ricardo therefore represents a significant relationship for the future that we are excited to build on and one that we cannot wait to share with our E1 Project customers.
